Here at Banana Blossom, we’re famous for our top-secret sauces – only four people in the whole world know our secret recipes.
… But there’s one recipe we’re letting out of the bag: Our co-founder, Ben, is sharing the recipe to his homemade Sriracha so you can cook up your very own batch at home!
Homemade Sriracha Recipe:
What you’ll need:
- 25 grams small dried chillies.
- 2 kg large fresh red chillies
- 250 grams peeled garlic
- 50 grams fresh bullet chillies
- 1/4 cup sea salt
- 1/2 cup vinegar
- 1.5L water
- 500 grams white sugar
- 200 ml rice vinegar
- Sea salt, to taste
How to make Sriracha:
- Toast your Chillies
• Toast the small dried chillies in a dry pan until fragrant. - Cook the Chilli Sauce Base
• In a large pot, combine your toasted chillies with the large fresh red chillies, peeled garlic, fresh bullet chillies, sea salt, vinegar, and water.
• Bring the mixture to a boil until the chillies are soft, then remove the liquid. Keep 250ml of the cooking liquid to add to sauce at the final stage. - Blend in a food processor until smooth
- Final cooking stage
• Return the blended mixture to the pot.
• Add the white sugar, rice vinegar, and reserved cooking liquid.
• Season with additional sea salt, if desired.
• Simmer the mixture until it reaches the desired thickness. - Enjoy!
Store the chilli sauce in airtight containers in the refrigerator for longer shelf life.
